Ingredients

1 cup boiling water
3/4 cup fine bulgur
1 1/2 cups fresh mint leaves , loosely packed
1/3 cup olive oil
3 tablespoons fresh lime juice
1 cup honeydew melon , rind removed and cut into 1/2-inch pieces
1/2 cup red onion , very thinly sliced
1/2 teaspoon salt ( optional )

Instructions

1.In a small bowl, pour boiling water over the bulgur and let it sit for 15 minutes.
2.Fluff the bulgur with a fork and let it cool down to room temperature.

4.In a large mixing bowl, combine the cooled bulgur, chopped mint leaves, and sliced red onion.
5.Add the honeydew melon pieces and drizzle the olive oil-lime juice dressing on top.
