3 flat leave parsley sprigs , coriander

Instructions

1.In a large saucepan, heat the olive oil over medium-high heat.
2.Add the sliced onions to the pan and sprinkle with salt and pepper. Cook, stirring occasionally, until the onions have softened and are caramelized, around 25-30 minutes.
3.Mix the turmeric, fenugreek, and dried mint in a small bowl, and then sprinkle over the onions. Cook for 1-2 minutes more.
4.Sprinkle the plain flour over the onions and cook for 1-2 minutes, stirring frequently.
5.Pour in the stock and cinnamon stick and bring to a simmer. Reduce heat to low, cover, and cook for 15-20 minutes until the soup has thickened.
6.Remove the cinnamon stick and stir in the lemon juice, caster sugar, and chopped fresh herbs.
7.Ladle into bowls and serve hot.
