Ingredients

3 cups basmati rice , cooked
1 package frozen lima beans
3 bunches dill , freshly chopped ( About 5 1/2 cups )
3 garlic cloves , minced
2 tablespoons yogurt
1 pinch saffron
3 teaspoons spices , advieh ( this can be found at a Middle Eastern market , or you can use vegetable or chicken bouillon )
3 tablespoons canola oil
salt and pepper
Baghali Polo is a popular Persian dish that is typically served at special occasions and celebrations. Instructions

1.Rinse and soak the lima beans for at least 4 hours.
2.Cook rice according to package instructions.
3.In a pot, heat up canola oil and sauté garlic until fragrant.
4.Add the lima beans and cook until tender.
5.Add advieh and mix well.
6.Add dill and mix well.
7.In a small bowl, mix saffron with 2 tablespoons of hot water, leave it for 5 minutes and then add yogurt and mix well.
8.In a pot, add a layer of rice then a layer of the lima bean mixture, repeating until there is no mixture left.
9.Pour the saffron yogurt mixture over the rice.
10.Cover the pot and cook over low heat for 50 minutes.
11.Serve hot with your favorite sides.
