1 can plum tomatoes , drained , cut up
1/2 cup uncooked long-grain white rice

2 cups granny smith apples , peeled , cored , and diced
1/4 cup chopped fresh parsley
3/4 cup low-fat sour cream or 3/4 cup yogurt
1 tablespoon lemon juice

Instructions

1.Melt the butter in a large pot or Dutch oven over medium heat.
2.Add the celery, onion, carrot and garlic and sauté until the vegetables are tender, about 10 minutes.
3.Add the chicken pieces and cook until browned, about 5-7 minutes.
4.Mix in the curry powder, chili powder, cumin, cloves, chicken broth, and tomatoes. Bring to a boil and reduce to a simmer.
5.Add the rice and simmer for 20 minutes or until rice is cooked through.
6.Stir in salt, black pepper, apples, parsley, sour cream or yogurt, and lemon juice.
7.Cook for an additional 5 minutes until heated through.
