Ingredients

2 medium sized eggplants
2 teaspoons tahini
1/2 teaspoon cumin
2 garlic cloves
30 -50 g walnuts
1 -2 tablespoon lemon juice
1 teaspoon chili flakes ( optional )
2 -3 tablespoons olive oil
100 g cream cheese ( optional )
1 -2 tablespoon parsley ( chopped )
salt and pepper ( to taste )

Instructions

1.Preheat the oven to 180°C.
2.Cut the eggplants in half and place them on a baking tray.
3.Make a few slits on the flesh of the eggplant halves and place chopped garlic cloves in them.
4.Drizzle olive oil over the eggplants, season with salt and pepper and roast in the oven for 35 to 45 minutes. The eggplants should be soft and golden brown when done.
5.Once the eggplants are cool enough to handle, scoop out the flesh and discard the skin.
6.In a food processor, blend the eggplant flesh, tahini paste, cumin, walnuts, lemon juice, chili flakes (if using), and cream cheese (if using) until smooth and creamy.
7.Adjust the seasoning to taste and stir in the chopped parsley.
8.Serve with pita bread, vegetables, or crackers.
