Ingredients

5 lbs leg of lamb ( or 2 shoulders )
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1/2 teaspoon ground cardamom
salt and black pepper
2 tablespoons sunflower oil
1 onion , cut in quarters
1 head garlic , cut in half
2 1/2 cups basmati rice
1 large onion , chopped
3 tablespoons sunflower oil
1/2 lb ground beef
salt and black pepper
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
4 1/4 cups hot lamb ( use 2 bouillon cubes ) or 4 1/4 cups chicken stock ( use 2 bouillon cubes )
1/3 cup sliced almonds
1/3 cup pistachios
1/3 cup pine nuts

Instructions

1.Preheat oven to 180C/350F.
2.In a bowl, add cinnamon, allspice, cumin, cardamom, salt and black pepper. Mix well.
3.Rub the mixture all over the lamb and place it in a roasting tray. Drizzle sunflower oil over it.
4.Place onion and garlic around the lamb.
5.Roast in the oven for 2 and a half hours until the lamb is tender.
6.In the meantime, rinse the rice well in cold water and soak it in water for 30 minutes.
7.In a pan, fry the chopped onion in sunflower oil until golden brown.
8.Add the ground beef and continue cooking for 10 minutes until browned.
9.Season the mixture with salt, black pepper, cinnamon, allspice, nutmeg and cloves. Mix well.
10.Add the hot lamb or chicken stock to the pan and bring it to a boil.
11.Drain the rice and add it to the beef mixture. Stir well and let it simmer for 3 to 4 minutes.
12.Turn down the heat to low, place a lid on the pan and let it cook untouched for 20-25 minutes until the rice is tender.
13.Toast the almonds, pistachios and pine nuts in a dry pan over medium heat.
14.Serve the lamb with the spiced rice and sprinkle the toasted nuts on top.
