Ingredients

1 large onion , chopped
1 stalk celery , chopped
1 large carrot , chopped
1 teaspoon oil
350 g dried orange lentils
2 liters vegetable bouillon granules or 2 liters chicken bouillon
1/2 lemon , juice of
1 teaspoon ground cumin
salt and pepper

Instructions

1.Rinse the lentils with cold water and drain well
2.Heat oil in a large saucepan and saute onion, celery and carrot until soft and fragrant
3.Add the in lentils, bouillon and cumin and bring to a boil, reduce heat and simmer for about 30 to 45 minutes or until the lentils are soft
4.Add lemon juice and season with salt and pepper to taste
5.Blend the soup until smooth with a stick blender or transfer it to a blender in batches and blend until smooth. Reheat gently before serving
