1/2 cup butter , softened or 1/2 cup butter substitute
2/3 cup sugar
2 eggs
2 1/4 cups unbleached flour
1 tablespoon baking powder

3/4 tablespoon anise seed , crushed lightly to release flavor
1/4 teaspoon freshly ground nutmeg
1/2 cup orange marmalade
1/2 cup water
1/2 cup sugar
1/2 teaspoon orange blossom water

Instructions

1.Preheat oven to 350°F (180°C).
2.In a large mixing bowl, cream the butter and sugar together until fluffy.
3.Beat in the eggs, one at a time, until incorporated.
4.Gradually add in the flour, baking powder and salt, mixing well.
5.Combine the orange juice, milk, crushed anise seed and nutmeg in a separate bowl.
6.Slowly add the wet mixture to the dry mixture and stir until well combined.

8.Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
