Ingredients

2 medium quinces , peeled , quartered , seeded and cored
3 1/2 cups water
10 tablespoons fresh lemon juice
2 1/2 cups sugar
3 cups cold water , for serving

Instructions

1.Place the quince quarters in a large saucepan with the lemon juice and water. Bring to a boil over high heat.
2.Reduce the heat to low and simmer for 1 to 1 1/2 hours, or until the quince is very soft and the liquid is reduced to half.
3.Strain the liquid through a fine-mesh sieve into a clean bowl, pressing on the solids to extract the juice. Discard the solids.
4.Add the sugar to the bowl and stir until dissolved.
5.Let cool to room temperature.
6.To serve, add ice and 1/4 cup of the sharbate beh to a glass. Top with 3/4 cup cold water. Stir and serve.
