Ingredients

1 cup basmati rice
1 3/4 cups water ( or amount suggested by rice packaging )
1/2 tablespoon margarine
1 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
1/8 teaspoon cumin
1/8 teaspoon pepper
2 tablespoons oil
1/2 tablespoon sugar
1/2 cup raisins
2 carrots
Kabli is a popular Afghan dish consisting of spiced Basmati rice with carrots and raisins. It is usually served with a side dish of meat or chicken. Kabli is a very aromatic and flavorful rice dish which is easy to prepare and makes a great side dish. The sweet flavor of carrots and raisins complement the slightly spiced rice making it a perfect combination for any meal. Instructions

1.Rinse and drain the basmati rice.
2.Add water to the drained rice, and cook till water is absorbed.
3.Add margarine, salt, cinnamon, cardamom, cumin, pepper, and cook with the rice for 20 minutes.
4.While the rice is cooking, peel and shred carrots. In a large skillet, heat oil over medium heat. Add sugar and stir. Add shredded carrots and cook until tender while stirring frequently. Add raisins and cook for about one minute. Remove from heat.
5.Carefully fold cooked carrots and raisins into the rice, serve hot.
