Ingredients

1 large eggplant
1 red bell pepper
1 1/2 tablespoons tahini
1 1/2 tablespoons plain yogurt ( add ( to taste )
3 garlic cloves , crushed
3 tablespoons lemon juice ( approx 1 lg lemon )
1 tablespoon fresh parsley
1 teaspoon red pepper flakes ( or to taste )
olive oil ( to taste )
salt ( to taste )
Baba Ganouj is a traditional Middle Eastern dish made from roasted eggplant, tahini, lemon juice, and garlic. It is a smooth and creamy dip that is perfect for parties, picnics, and gatherings of all kinds. Instructions

1.Preheat the oven to 400°F (205°C).
2.Cut the eggplant in half lengthwise and place it on a baking sheet, cut side down.
3.Cut the red bell pepper into quarters, remove the stem, seeds, and membranes, and place on the same baking sheet.
4.Roast the vegetables for about 30 minutes, or until the eggplant has collapsed and the pepper is soft and browned around the edges.
5.Scoop out the eggplant pulp with a spoon and place it in a medium bowl.
6.Remove the skin from the pepper and discard. Chop the pepper into small pieces and add them to the bowl with the eggplant.
7.Add the tahini, plain yogurt, crushed garlic, lemon juice, parsley, red pepper flakes, and salt to the bowl.
8.Mix well, but leave some texture.
9.Drizzle olive oil on top and sprinkle with more parsley and red pepper flakes for garnish.
10.Serve with pita or chips.
