Ingredients

3 tablespoons olive oil
2 onions , thinly sliced
2 large aubergines , chopped
1 garlic clove
Tabasco sauce or hot sauce , to taste
6 medium juicy tomatoes , chopped
6 chilies
200 g grated cheddar cheese or 200 g feta cheese
6 medium pita breads
Aubergine (Eggplant) Pitas are a Mediterranean-inspired dish that is perfect for a light lunch or dinner. The dish consists of soft and tender aubergine, tomatoes, and onions stuffed in a pita bread and topped with either grated cheddar cheese or crumbled feta cheese. Instructions

1.Preheat your oven to 200°C.
2.In a large, non-stick frying pan, heat 2 tablespoons of olive oil over medium heat.
3.Add the onions and fry until soft and fragrant, then remove from the pan.
4.In the same pan, add another tablespoon of olive oil, the chopped aubergine and garlic and sauté until soft and browned.
5.Add the tomatoes and chilies and cook for another 5 minutes.
6.Remove from heat and season with Tabasco or hot sauce to taste.
7.Cut the pita breads in half and place them on a baking tray.
8.Stuff each pita bread with the aubergine mixture and top with either grated cheddar cheese or crumbled feta cheese.
9.Bake for 10-15 minutes, or until the cheese has melted and the pita breads are golden brown.
10.Remove from the oven and serve hot.
