Instructions

Bring to a boil over medium heat, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender and the water has been absorbed.
5.While the lentils are cooking, peel and slice the onions. Heat the olive oil in a large frying pan, then add the onions and sauté over medium heat for 15-20 minutes, or until golden and caramelized. Stir in the cumin and cinnamon, and season with salt and pepper.
6.When the rice and lentils are cooked, mix them together in a large bowl and stir in the caramelized onions. Serve hot or warm.
