Ingredients

8 cups milk
1 1/2 cups non-fat powdered milk
1 cup yogurt starter , preferably Greek ( Yogurt starter is yogurt with active cultures , either from a previous yogurt session or store-bought )
Yogurt is a popular breakfast food enjoyed around the world. While store-bought yogurt is convenient, it often contains added sugars and preservatives. Making your own yogurt at home not only allows you to control the ingredients, but it also produces a fresher and creamier product. This recipe for homemade thick or Greek-style yogurt uses non-fat powdered milk to achieve a creamy texture. Greek-style yogurt, which is made by straining regular yogurt to remove the whey, is thicker and creamier than regular yogurt. It can be enjoyed as a base for many recipes or simply topped with fresh fruit and honey for a healthy breakfast.

Instructions

1.In a large pot, whisk together the milk and powdered milk until fully combined.
2.Heat the milk mixture over medium heat, stirring frequently to prevent a skin from forming on the surface and to prevent scorching.
3.Bring the milk to a temperature of 180°F to 190°F, then remove from heat and allow the mixture to cool to 110°F to 115°F.
4.Once the milk mixture has cooled to the desired temperature, whisk in your yogurt starter until fully combined.
5.Transfer the mixture to a large jar or container, cover, and let sit at room temperature for 5-12 hours or until the yogurt thickens to your desired consistency.
6.Once the yogurt has set, transfer it to the refrigerator to chill for at least 2 hours before enjoying.
