Ingredients

3 fresh jalapeno peppers , stems removed
1 1/2 pounds fresh tomatillos , husks removed
3 green onions
1 small onion , quartered
1 bunch fresh cilantro , stems trimmed
1 cup heavy cream
1 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 pound frozen fully cooked salad shrimp , thawed
1 bag baby spinach leaves
2 teaspoons vegetable oil , divided
10 corn tortillas
8 ounces shredded Monterey Jack cheese
1/2 cup sour cream ( optional )
Shrimp Enchiladas Suizas are a Mexican-inspired dish that combines fresh seafood with tangy tomatillo sauce and spicy jalapeno peppers. This recipe is a healthier twist on traditional cheese enchiladas, using salad shrimp and spinach as the filling and a creamy jalapeno-tomatillo sauce as the topping. Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Cut jalapeno peppers in half lengthwise; remove seeds and stem. Cut tomatillos into quarters. Slice green onions, reserving green tops for later. In a large saucepan, combine jalapeno peppers, tomatillos, white parts of green onions, quartered onion, and cilantro. Add enough water to cover. Bring to a boil over high heat; reduce heat, cover and simmer until vegetables are tender, about 10 minutes. Drain off half of the liquid.
3.In a blender or food processor, puree jalapeno mixture in batches until smooth. Return to pan and stir in cream, broth, salt and pepper. Heat over low heat, stirring constantly until warmed through.
4.In a large skillet over medium-high heat, cook shrimp until heated through, about 3 minutes. Add spinach and cook until wilted, about 2 minutes. Remove from heat; stir in half of the cheese. Use remaining oil to coat a 9x13 inch baking dish.
5.Pour 1/4 cup of the jalapeno sauce in the bottom of the prepared dish. Dip tortillas in remaining sauce to lightly coat. Spoon shrimp mixture in center of each tortilla; roll up and place seam side down in dish. Pour remaining sauce over the enchiladas and sprinkle with remaining cheese.
6.Bake in preheated oven until cheese is melted and bubbly, about 20 minutes. Garnish with green onion tops and sour cream, if desired.
