Instructions

1.Heat a large pot over medium-high heat.
2.Add the chopped onion and sauté for 2-3 minutes or until soft and translucent.

4.Cover and bring to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the chicken is cooked through.
5.While the chicken is cooking, blend the walnuts and 1/2 cup of water in a blender or food processor until the mixture is smooth and creamy.
6.Add the walnut mixture to the pot with the chicken, along with the pomegranate concentrate (or paste).
7.Mix well, then bring the stew to a boil.
8.Reduce the heat to low, cover, and simmer for an additional 30-40 minutes or until the sauce has thickened and the chicken is very tender.
9.In a small bowl, whisk together the flour and 1/4 cup of water until smooth.
10.Add this mixture to the pot and stir well.
11.Simmer the stew for an additional 10-15 minutes or until the sauce has thickened to your liking.
12.Remove the bay leaves from the stew and serve hot with steamed rice, if desired.
