Ingredients

3 garlic cloves
1 large eggplant
4 tablespoons prepared tahini ( see my recipe for tehina )
1 teaspoon lemon juice
1/2 teaspoon cumin
salt and pepper
Baba Ganoujh is a classic Middle Eastern dip that’s made by roasting eggplants and blending them with tahini, garlic, lemon juice, cumin, salt, and pepper. It’s typically served with pita bread, vegetables, or crackers as a tasty appetizer or snack. The dip has a rich and creamy texture, and a smoky, slightly sweet flavor. Instructions

1.Preheat the oven to 400°F.
2.Peel the garlic and chop finely.
3.Cut the eggplant in half lengthwise.
4.Rub the eggplant with olive oil, salt and black pepper.
5.Place the eggplant cut-side down on a baking sheet.
6.Bake until the skin is charred and the flesh is very soft, about 30 minutes.
7.Remove from the oven and let cool.
8.Scrape the eggplant flesh from the skin into a food processor.
9.Add garlic, tahini, lemon juice, cumin, salt, and pepper. Process until smooth.
10.Transfer the mixture to a bowl and garnish with fresh parsley leaves and olive oil before serving.
