2 cups uncooked long-grain white rice
1/2 teaspoon saffron thread
1 pinch sugar
1 teaspoon warm water
5 tablespoons melted butter
2 tablespoons butter , cut into cubes
2 small baking potatoes , peeled and very thinly sliced
Chelo Seebzamini is a classic Iranian dish that is often served at special occasions such as weddings and festivals. Instructions

1.Rinse rice with cold water, until the water runs clear.
2.Place rice in a large pot with 4 quarts of water and 2 tablespoons of salt. Bring the water to a boil over high heat. Cook the rice until it is tender, about 18 to 20 minutes.
3.Drain the rice and rinse it with hot water in a colander. Place the rice back in the pot and cover it with a tight-fitting lid. Let it steam for at least 10 minutes.
4.Preheat the oven to 375°F. In a bowl, mix the saffron thread with the sugar and warm water. Stir until the sugar dissolves and the water turns yellow.
5.Pour the melted butter into a baking dish. Add the sliced potatoes and pour the saffron mixture over the potatoes. Gently mix everything together so that the potatoes are well coated.
6.Bake the potatoes in the oven for about 20 minutes.
7.Once the potatoes are done, use a fork to fluff the rice. Melt the cubed butter in a small saucepan over medium-high heat. Drizzle the melted butter over the rice.
8.Arrange the potatoes on top of the rice and serve hot.
