Ingredients

4 4 chicken thighs or 4 chicken breasts
2 ounces cashews or 2 ounces macadamia nuts
2 shallots , finely chopped
2 garlic cloves , crushed
2 red chilies , chopped
2 inches lemongrass
1 tablespoon tamarind paste
2 tablespoons soy sauce
1 tablespoon fish sauce
2 teaspoons sugar
1/2 teaspoon salt
1 tablespoon rice wine vinegar or 1 tablespoon white wine vinegar
Grilled Cashew Nut Chicken is an interesting dish that combines cashews and chicken. Instructions

1.Soak skewers in water.
2.In a bowl, mix the cashews with the shallots, garlic, chilies and lemongrass until finely chopped.
3.With a sharp knife, cut deep diagonal slashes across the chicken, then slash again at right angles to make 1-inch diamonds.
4.Add the tamarind paste to the cashew mixture and stir in the soy sauce, fish sauce, sugar, salt and vinegar. When mixed, add the chicken and stir well to coat. Cover and chill for at least 2 hours.
5.Thread the chicken on to the skewers, then cook on a barbecue for 8-10 minutes, turning occasionally until golden and cooked through.
6.Good with spiced rice or noodles.
