1 salam leaf or 1 bay leaf
1/2 teaspoon turmeric
1/2 cup tamarind juice
1 cup coconut milk
2 tablespoons vegetable oil

Instructions

1.Blend the shallots/onion, garlic, coriander, ginger, lemon grass, chili powder and turmeric into a smooth paste.
2.Heat up the oil in a frying pan, add the paste and salam/bay leaf, then sauté everything together until fragrant.
3.Add the tamarind juice and coconut milk, then simmer the mixture for 10 minutes.
4.Add the fish fillet pieces and cook for approximately 5-7 minutes until the fish is cooked through.
5.Add salt to taste and serve with sliced cucumber and mint.
