Ingredients

2 ounces fresh bean sprouts
6 ounces tofu , drained
4 eggs , beaten with a little
salt
1/2 teaspoon salt
1 teaspoon vegetable oil
2 red chilies or 2 green chilies , deseeded , thinly sliced
2 tablespoons sweet soy sauce ( kecap manis )
1 tablespoon white vinegar
2 -3 tablespoons fried crushed peanuts
3 tablespoons shallots , flakes fried
1 tablespoon chopped fresh parsley

Instructions

1.In a mixing bowl, whisk the eggs with salt and set aside.

4.Add the crumbled tofu and beansprouts, stir until the beansprouts are slightly wilted.
5.Pour in the whisked eggs over the mixture and gently stir it around for about 1 minute.
6.Sprinkle in chopped parsley leaves and half of the fried shallots and flip the omelet over to the other side.
7.Cook until the other side is golden brown.
8.Slide the omelet out of the pan onto a plate.
9.In a separate bowl, whisk together sweet soy sauce and vinegar.
10.Reheat 1 teaspoon of oil in the frying pan over low heat.
11.Add thinly sliced chilies and stir it for several seconds.
12.Pour in the sweet soy sauce mixture, stirring gently until heated through.
13.Spoon the sauce over the omelet.
14.Garnish with the remaining fried shallots and fried crushed peanuts. Serve hot.
