Ingredients

1 kg chicken piece ( thigh & drumsticks are best )
1 brown onion
2 garlic cloves
2 cm piece gingerroot
1 tablespoon ground nutmeg
1 tablespoon ground pepper
250 g tomatoes , sliced into thin wedges
1/4 cup sweet soy sauce
2 tablespoons palm sugar ( gula jawa )
1/4 cup coconut cream
3 tablespoons vegetable oil

Instructions

1.Cut brown onions, garlic cloves, and gingerroot into small pieces and set aside.
2.In a large bowl, mix chicken pieces with ground nutmeg, ground pepper, and sweet soy sauce. Ensure chicken pieces are coated thoroughly.
3.Heat vegetable oil in a large pan on medium-high heat. Cook chicken pieces for around 5-6 minutes until browned on all sides.
4.Remove chicken from the pan and set aside on a plate.
5.In the same pan, add garlic, onion, and ginger pieces and cook for 1-2 minutes until fragrant.
6.Add sliced tomato wedges and cook for an additional 2-3 minutes until they have softened.
7.Add palm sugar, coconut cream, and 1/4 cup of water. Mix well until the sugar has dissolved.
8.Add cooked chicken pieces back into the pan and stir until the sauce has coated the chicken pieces thoroughly.
9.Simmer for 20-25 minutes, allowing the sauce to thicken and chicken pieces to cook through.
