3 cardamom pods , crushed
1 cinnamon sticks
1 cup organic vegetable broth ( such as Swanson Certified Organic )
1 tablespoon fresh lime juice
1 1/4 cups water
1 cup uncooked basmati rice
1 cup light coconut milk
1/4 teaspoon salt

Instructions

1.Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
2.Add beef to pan; cook 5 minutes or until browned, stirring occasionally.
3.Remove beef from pan.
4.Reduce heat to medium; add oil to pan.
5.Add shallots, ginger, garlic, and chiles to pan; cook 3 minutes or until shallots are tender, stirring frequently.
6.Add coriander and next 6 ingredients (through cinnamon) to pan; cook 1 minute, stirring constantly.
7.Return beef to pan.
8.Add broth, juice, and 1 1/4 cups water to pan. Bring to a boil; reduce heat, and simmer 1 hour and 10 minutes or until beef is tender, stirring occasionally. Discard cinnamon stick.
9.Meanwhile, combine rice and 1 1/4 cups water in a saucepan. Bring to a boil; cover, reduce heat, and simmer 18 minutes or until liquid is absorbed.
10.Combine cooked rice, coconut milk, and 1/4 teaspoon salt in a medium bowl. Serve with beef mixture.
