Kue Lupis is a traditional Indonesian dessert that is typically served as a snack or dessert. It consists of small balls of sticky rice that are flattened into triangles and wrapped in banana leaves. When steamed, the rice becomes sticky and dense, with a chewy texture. The toppings of sweetened coconut, palm sugar, and granulated sugar add a touch of sweetness and crunch to the dessert. It's a perfect treat after a spicy meal or as a snack with tea or coffee.

Instructions

.Rinse the sticky rice and place it in a pot with 500ml of water. Cook over medium heat until the rice is tender and all the water is absorbed.
.Cut the banana leaf into pieces large enough to wrap the rice into dumplings.
.Divide the cooked rice into 20 equal portions, and shape each portion into a small ball.
.Flatten each ball with your palm and fold it into a triangle.
.Place the folded rice onto a banana leaf, fold the leaf over, and wrap it into a neat package.
.Bring a pot of water to boil and add the wrapped rice packages. Cook for 30 minutes.
.Cut the palm sugar into small pieces and place them into a pan with 125ml of water. Cook over medium heat until the sugar has dissolved.
.Add the grated coconut and salt and mix well. Cook over low heat until the coconut has turned light brown.
.Remove the cooked rice packages from the boiling water and roll them into the cooked sugar and coconut mixture.
.Serve warm and enjoy!
