Ingredients

3 cucumbers , peeled , seeded and cut into bite-sized pieces
3 tablespoons salt ( divided )
2 shallots , minced
3 garlic cloves , minced
1 tablespoon fresh ginger , chopped
2 tablespoons peanut oil
2 tablespoons ground almonds ( optional )
1 1/2 teaspoons turmeric
1 tablespoon sugar
1/2 cup vinegar
1/4 cup water

Instructions

1.Add cucumber pieces and 2 tablespoons of salt into a large bowl and set aside for 20 minutes.
2.Rinse the cucumber pieces with water and drain well.

4.Add ground almonds, turmeric, sugar, and the remaining 1 tablespoon of salt. Stir well until combined.
5.Add vinegar and water and bring the mixture to a boil.

7.Remove from heat, let it cool and store in a jar in the fridge.
