2 cooked chicken breasts , chopped ( or half a package turkey bacon , chopped finely )
1 tablespoon tomato ketchup
1/2 teaspoon shrimp paste ( or half inch cube of solid shrimp ( blachan )
salt and pepper , to taste
1/4 cup ketjap manis ( or more , to taste )
1 teaspoon sambal oelek ( chili paste , or to taste ) ( optional )

Instructions

1.Heat a large wok or frying pan on high heat, add a little oil, add onions, garlic, and celery, stir fry them for 1-2 minutes until onions turn translucent.
2.Add the chicken or turkey bacon and cook until browned.
3.Add the shrimp paste, tomato ketchup, salt, and pepper and cook for another 1-2 minutes.
4.Add the prepared jasmine rice to the pan and stir-fry until heated through and well combined with the other ingredients.
5.Add ketjap manis, sambal oelek to the pan and stir fry for 1-2 minutes more.
6.Taste and adjust seasoning as needed.
