Ingredients

1 lb white basmati rice
2 tablespoons oil
2 onions , peeled and diced
4 garlic cloves , peeled and crushed
1 inch fresh gingerroot , peeled and finely diced
2 teaspoons cumin seeds
1 1/2 lbs boneless chicken or 1 1/2 lbs boneless chicken breasts , cubed
1 teaspoon saffron strand
1/2 pint boiling water
6 cardamom pods , bruised
4 tablespoons chopped of fresh mint
2 teaspoons garam masala
1 cinnamon stick
8 ounces skinned and chopped tomatoes or 8 ounces tinned chopped tomatoes
2 ounces sultanas
salt
pepper
2 ounces blanched almonds , toasted
Kashmiri Chicken, Cardamom and Saffron Pilau is a popular Indian dish that is often served during special occasions. It is a flavorful combination of basmati rice, chicken and a variety of aromatic spices. This recipe is made with saffron which gives it a distinct yellow color and adds a subtle flavor to the dish. Instructions

1.Rinse the rice in cold water until the water runs clear, then leave to soak in cold water for at least 30 minutes.
2.Heat the oil in a large pan over medium heat and add the onions, garlic and ginger. Fry until softened and lightly browned.
3.Add the cumin seeds and chicken and fry for 5-10 minutes or until the chicken is browned on all sides.
4.In a small bowl, add the saffron to the boiling water and let steep for 5 minutes. Add this saffron water to the pan.
5.Add the cardamom pods, mint, garam masala, cinnamon stick, chopped tomatoes and sultanas to the pan. Season with salt and pepper and mix well to combine.
6.Drain the rice and add it to the pan along with 2 pints (4 cups) of water. Bring to a boil, then reduce the heat to low and let simmer covered for about 20 minutes or until the rice is cooked.
7.Toast the almonds in a dry pan or in the oven, then sprinkle them over the pilau and serve.
