1 1/2 cups dried lentils , rinsed
6 cups water
1 tablespoon vegetable oil
1 1/2 cups onions , chopped
2 cloves garlic , minced
1 fresh chili pepper
1 carrot , peeled and diced
1 potato , diced

3 cups undrained canned tomatoes
1 tablespoon fresh cilantro , chopped
1 1/2 teaspoons salt
2 teaspoons cumin

Instructions

1.In a large pot, bring the water and lentils to a boil. Reduce heat and simmer for 45 minutes.
2.In a separate pot, heat vegetable oil over medium heat. Add onions, garlic, chili pepper, carrot, and potato. Cook until vegetables are soft.
3.Add coriander to the vegetable mixture. Stir and cook for 2 minutes.
4.Add undrained canned tomatoes to the vegetable mixture. Stir and cook for 5 minutes.
5.Pour the vegetable mixture into the pot with the lentils. Add cilantro, salt, and cumin. Stir and simmer for 15 minutes.
