Ingredients

2 tablespoons fresh serrano peppers or 2 tablespoons jalapeno chiles , coarsely chopped
1 tablespoon coarsely chopped garlic
1 tablespoon sugar
1/4 teaspoon salt
black pepper ( to taste )
3 tablespoons fish sauce
2 teaspoons soy sauce
2 -4 tablespoons vegetable oil
1/4 lb ground pork ( may also use ground beef , turkey or chicken )
3 cups dried wide rice noodles
3/4 cup fresh basil leaf ( may also use or mix with mint )
5 cherry tomatoes , quartered ( may use more )
Thai Stir-Fried Rice Noodles with Basil and Chillies, also known as Kway Teow, is a beloved dish in Thai cuisine. It's a simple but flavorful stir-fry made with wide rice noodles, ground meat, fresh herbs, and a spicy sauce. Instructions

1.Soak the rice noodles in warm water for 30 minutes until softened. Drain well and set aside.
2.In a small bowl, mix together the serrano peppers, garlic, sugar, salt, black pepper, fish sauce, and soy sauce. Set aside.
3.Heat a wok over high heat and add 2 tablespoons of the vegetable oil. Add the ground pork and stir-fry for 3-4 minutes until browned and cooked through.
4.Add the remaining 2 tablespoons of vegetable oil to the wok and stir-fry the noodles for 3-4 minutes until softened and slightly charred.
5.Add the sauce mixture to the wok and stir-fry for 1-2 minutes until the sauce has coated the noodles and pork.
6.Add the basil leaves and cherry tomatoes to the wok and toss everything together for 1-2 minutes until the basil is wilted and the tomatoes are slightly softened.
