1 lb fresh morel , diced
1 -2 king trumpet mushrooms , finely diced
1 ounce dried lobster mushroom
2 tablespoons boiling water
1/2 teaspoon salt
2 -3 ramps , thinly sliced
2 -3 teaspoons palm sugar , grated
1 -2 lime
1 fresh thai chili pepper
Morel Mushroom Laab is a traditional Thai dish that is typically made with ground meat. This vegan version uses diced morel mushrooms and king trumpet mushrooms instead, creating a flavorful and satisfying vegetarian dish. The dish is seasoned with spicy Thai chili peppers, tangy lime juice, and sweet palm sugar, giving it a balance of flavors that is characteristic of Thai cuisine. Instructions

1.Heat a dry skillet over medium-high heat and add the diced morels and king trumpet mushrooms. Cook for 6-8 minutes until the mushrooms start to release their water and brown.
2.While the mushrooms are cooking, soak the dried lobster mushroom in boiling water for 10-15 minutes until soft. Drain and finely chop.
3.Once the mushrooms are browned, add the chopped lobster mushrooms and continue to cook for 2-3 minutes.
4.Remove the skillet from the heat, and add salt, sliced ramps, grated palm sugar, lime juice, and chopped Thai chili pepper. Mix well.
5.Serve the laab in lettuce cups or over rice, and garnish with fresh herbs and lime wedges.
