Ingredients

2 1/4 lbs chuck steaks , cut into 1 inch squares
5 cups water
1 cup coconut milk
1 cup roasted peanuts
nam pla ( fish sauce )
3 tablespoons tamarind juice
coconut sugar , to taste
7 dried chilies , deseeded and finely chopped
1/2 teaspoon fresh ground black pepper
2 tablespoons coriander seeds
2 tablespoons cumin seeds
1 tablespoon shredded lemongrass
1 cinnamon stick
5 cardamom seeds
1/4 whole fresh nutmeg , grated
1 teaspoon salt
7 shallots , peeled and broiled
5 garlic cloves , peeled
1/2 teaspoon shrimp paste ( kapi )
Masaman Curry is a popular dish in Thailand, typically served with steamed rice. Instructions

1.In a dry wok or frying pan, roast the coriander and cumin seeds until fragrant. Then grind them into a powder.
2.In a blender, blend the shallots, garlic, and lemongrass into a paste.
3.In a large pot, bring the water to a boil. Add the beef and cinnamon stick. Let it cook for 10 minutes.
4.In a separate pot, heat the coconut milk. Add the curry paste, ground coriander and cumin, and grated nutmeg. Stir well.
5.Add the curry mixture to the pot with the beef. Add the tamarind juice, fish sauce, chopped chilies, and shrimp paste. Let it cook for 30 minutes.
6.Add the peanuts and sugar. Let it simmer for another 10 minutes. Serve hot with rice.
