Ingredients

500 g ground lean pork or 500 g finely chopped pork ( ~1.1 lbs )
2 tablespoons water
2 tablespoons lemon juice
2 tablespoons fish sauce
1/2 teaspoon dried chili
1 teaspoon finely sliced fresh chili
2 tablespoons onions , finely sliced
2 tablespoons shallots , sliced into 2 cm pieces
2 tablespoons roasted peanuts
2 tablespoons gingerroot , finely sliced
1 tablespoon mint leaf , fresh
2 tablespoons coriander , fresh , chopped , leaves & stems
6 large lettuce leaves
roasted peanuts

Instructions

1.In a blow mix together 2 tablespoons each of water, lemon juice, and fish sauce.
2.Add 1/2 teaspoon of dried chili and 1 teaspoon of finely sliced fresh chili to the bowl and mix well.
3.In a separate bowl, mix together 500g of ground lean pork, or 500g of finely chopped pork, 2 tablespoons each of onions and shallots, and 2 tablespoons of gingerroot.
4.Brown the pork mixture in a non-stick skillet, stirring often, until fully cooked.
5.Once the pork is cooked, remove from heat and mix it with the sauce, tossing well to combine.
6.Add 2 tablespoons of roasted peanuts, 1 tablespoon of fresh mint leaves, 2 tablespoons of fresh coriander, and stir gently once more.
7.Serve the salad on 6 large lettuce leaves, garnished with extra peanuts, ginger, dried or fresh chili, and coriander sprigs.
