Ingredients

4 large red chilies

5 teaspoons cumin ( freshly ground )
2 teaspoons turmeric
6 -8 tablespoons vegetable oil
2 tablespoons malt vinegar
4 tablespoons brown sugar

Instructions

1.Wash the chilies and chop them into small pieces.
2.Peel and chop the red onion and garlic cloves.
3.In a pan, heat 6 tablespoons of vegetable oil, and add the chopped ingredients.
4.Cook on medium heat until the onion turns translucent.
5.Add freshly grated ginger, cumin, turmeric, brown sugar, and malt vinegar to the pan.
6.Stir well and cook for another 5 minutes.
7.Remove from heat and let it cool down.
8.Pour the mixture into a food processor and blend well until you get a smooth paste.
9.Taste and adjust the salt and sugar to your liking.
10.Store it in an airtight container in the fridge.
