Ingredients

1 tablespoon vegetable oil
1 red onion , halved , finely chopped
2 garlic cloves , crushed
3 teaspoons finely grated fresh ginger
500 g ground chicken
2 tablespoons sweet chili sauce
2 tablespoons soy sauce
2 tablespoons chopped fresh Thai basil
2 fresh red birds eye chilies , finely chopped ( optional )
100 g rice vermicelli
1 small about 80g carrot , peeled , finely grated
1 packet spring roll pastry dough
vegetable oil , extra , to deep fry
125 g good-quality whole-egg mayonnaise
60 ml sweet chili sauce
1 tablespoon fresh lime juice
1 pinch salt
Chicken & Thai Basil Spring Rolls With Sweet-Chili Mayonnaise is an Asian-inspired appetizer perfect for entertaining guests. Ground chicken is infused with Thai basil, soy sauce and sweet chili sauce to make a bold and flavorful filling. Paired with rice vermicelli and grated carrot, they are wrapped in thin pastry pastry and deep-fried to crispy perfection. Instructions

1.Heat the vegetable oil in a large frying pan over medium heat.
2.Add the chopped red onion and cook for 5 minutes until softened.
3.Add the crushed garlic and grated ginger and cook for a further 1 minute.
4.Increase the heat to high and add the ground chicken, breaking it up with a wooden spoon until browned all over.
5.Stir in the sweet chili sauce, soy sauce, chopped Thai basil and chopped red birds eye chilies (optional) to the chicken mixture.
6.Cook, stirring occasionally, for 5-7 minutes or until the chicken is cooked through and the liquid has evaporated.
7.Cook rice vermicelli according to packet instructions, then drain once cooked.
8.In a separate bowl, combine the cooked vermicelli and grated carrot.
9.To assemble the spring rolls, place a sheet of spring roll pastry dough on a clean surface with one corner facing you.
10.Spoon 2 tablespoons of the chicken mixture onto the pastry in a horizontal line.
11.Place a small amount of the vermicelli mixture over the chicken.
12.Roll the pastry tightly, tucking in the sides halfway through the roll to enclose the filling.
13.Repeat with remaining ingredients.
14.Heat vegetable oil in a wok or deep-fryer until hot.
15.Deep-fry spring rolls, in batches, for 2-3 minutes or until golden brown.
16.Drain on paper towel. To make the sweet-chili mayonnaise, combine mayonnaise, sweet chili sauce, fresh lime juice and a pinch of salt in a small bowl and whisk until smooth.
17.Serve hot spring rolls with sweet-chili mayonnaise.
