16 green king prawns
2 teaspoons peanut oil
6 -8 wing beans , cut into thirds diagonally
1 pomelo fruit , segmented ( note below )
1/2 cup mint leaf
1/2 cup Thai basil
1/2 cup coriander leaves
1 stalk lemongrass , white part only , very finely shredded
8 cherry tomatoes , halved
1 red birds eye chile
1 garlic clove
1 teaspoon dried shrimp ( optional , note below )
2 tablespoons palm sugar , grated
1/4 cup lime juice
1/4 cup fish sauce

Instructions

1.Preheat the grill to high heat
2.Skewer the prawns and brush with peanut oil
3.Grill the prawns for 2-3 minutes on each side or until cooked through
4.In a large bowl, mix together the wing beans, pomelo, mint, Thai basil, coriander, lemongrass, and cherry tomatoes
5.In a mortar and pestle, pound together the chili, garlic and dried shrimp (if using) until well combined
6.Add the palm sugar and continue to pound until the mixture forms a paste
7.Add the lime juice and fish sauce to the mortar and mix together
8.Pour the dressing over the salad and toss until everything is well combined
