Camarones Diablos, also known as Devil Shrimp, is a classic Mexican dish that features succulent shrimp cooked in a spicy tomato-based sauce. This recipe is a healthier take on the traditional dish, made with brown rice instead of white rice and using chicken broth instead of heavy cream. The chipotle peppers in adobo sauce add a smoky and spicy flavor to the dish, making it a great meal for spice lovers. Instructions

.In a medium saucepan, bring chicken broth to a boil. Add brown rice, 1 tablespoon butter, and salt. Reduce heat to low, stir, cover, and simmer for 45 minutes or until rice is tender and liquid has been absorbed.
.In a large skillet, melt 1 tablespoon butter with olive oil over medium heat. Add sliced onion, jalapeno peppers, and minced garlic. Stir and cook until onions are translucent, about 8 minutes.
.Add red wine, Worcestershire sauce, and minced chipotle peppers to the skillet. Stir well, and then add the shrimp. Mix everything together and cook for 3-5 minutes, or until the shrimp are pink and cooked through.
.Serve the shrimp mixture over the cooked brown rice.
