This vegetarian recipe is a twist on a classic Thai dish that's usually made with meat. The Red Thai Curry is a dish that's as delicious as it is colorful. It's made from a combination of aromatics, vegetables, and spices that come together to create a perfect balance of flavors that's satisfying and comforting. The curry paste, which is made from a combination of different spices and herbs, gives the dish its characteristic color and flavor. The addition of coconut milk helps to balance out the heat and provides a creamy base for the vegetables and tofu to cook in. This dish can be served as a main course for lunch or dinner and is perfect for those who want to incorporate more healthy and plant-based meals into their diet.

Instructions

1.Rinse the rice in cold water and then add it into a pot with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and cook for 18 minutes.
2.While the rice is cooking, prepare the vegetables. Mince the garlic and ginger in a food processor, then add the deseeded pepper and sliced carrots and pulse until finely chopped.
3.Add the minced vegetables into a large wok with a tablespoon of oil over medium heat. Sauté until fragrant and slightly golden in color, then add the coconut milk, red curry paste, and soy sauce.
4.Bring everything to the boil, then add the cubed tofu and simmer for 5 minutes.
