Ingredients

1 lb firm tofu
cornstarch , for dusting
4 ounces dried round rice sticks ( noodles )
1 cup vegetable oil ( for frying , ( or more )
2 Japanese eggplants , rinsed and thinly sliced on diagonal
2 tablespoons tamari soy sauce
8 tablespoons Thai sweet chili sauce ( or other asian sweet sauce , such as hoisin sauce )
1/2 cup crushed unsalted peanuts ( to garnish )
4 tablespoons cilantro leaves ( to garnish )
1 green chili pepper , thinly sliced , for garnish
Tofu Triangles With Thai Chili Sauce is an authentic Thai dish that is full of flavors and spice. As a vegan appetizer or a light lunch dish, the combination of tofu, eggplants, noodles and Thai sweet chili sauce make this dish an explosion of tastes in your mouth. Instructions

1.Drain the tofu and cut into 1 inch thick triangles.
2.Lightly dust the triangles with cornstarch.
3.Cook the noodles according to the package instructions and set aside.
4.In a wok or deep skillet, heat the oil until it reaches 375 degrees.
5.Fry the tofu triangles in batches until golden brown and crispy.
6.Remove the tofu from the oil and drain on paper towels.
7.In the same wok, stir-fry the eggplants until tender.
8.Add soy sauce, sweet chili sauce and stir well.
9.Add the cooked noodles to the wok and toss until they are coated with the sauce.
10.To serve, place the noodles on a plate, top with the tofu triangles and garnish with crushed peanuts, cilantro leaves and sliced green chili pepper.
