500 g chicken breasts , free range is best
100 g tofu , deep fried and sliced
400 ml coconut milk
1/2 cucumber , sliced in thin strips
1/2 red onion , sliced in strips
1 red pepper , sliced in strips
50 g snow peas ( not sliced )
cos lettuce , shredded
1 cup mint
1 cup coriander
100 g roasted cashews
60 ml lime juice
1 tablespoon fish sauce
2 -3 tablespoons palm sugar , grated
2 tablespoons sambal oelek chili paste , paste

Instructions

1.Bring the coconut milk to a boil in a pot.
2.Add the chicken breasts and reduce the heat to a simmer, poaching the chicken for 20 minutes or until cooked through.
3.Once cooked, remove the chicken from the pot and allow to cool. Then shred into bite-sized pieces.
4.In a blender, mix together lime juice, fish sauce, palm sugar, and sambal oelek chili paste to make a dressing.
5.In a large bowl, combine the chicken, tofu, cucumber, red onion, red pepper, snow peas, cos lettuce, mint, coriander, and cashews.
6.Drizzle the dressing over the salad and toss well.
