2 zucchini , shredded
1 large yellow squash , shredded
1/2 red bell pepper , chopped
1 can black beans , rinsed and drained
1 cup green salsa
1/2 teaspoon ground cumin
1/2 teaspoon ground cayenne pepper
1 package Mexican style shredded cheese blend , divided
6 burrito-size flour tortillas
1 package Mexican style shredded cheese blend

Instructions

1.Preheat the oven to 375°F
2.Heat olive oil in a large skillet over medium heat.
3.Add onion and garlic and cook until onion is translucent, stirring occasionally.
4.Add shredded zucchini, yellow squash, and chopped red bell pepper to the skillet and cook for 5 minutes.
5.Stir in black beans, green salsa, ground cumin, and ground cayenne pepper. Cook for 2-3 minutes until everything is warmed through.
6.Remove from heat and stir in half of the package of shredded cheese.
7.Spoon ½ cup of the vegetable mixture onto each flour tortilla and roll up, placing seam-side down in an 8X8 inch glass baking dish.
8.Sprinkle the remaining cheese on top and bake for 20-30 minutes, until cheese is melted and bubbly.
