4 cilantro roots , chopped coarsley

1 1/2 cups potatoes , diced , peeled
2/3 cup water
1/2 cup mixed mushrooms , thickly slice
4 scallions , chopped coarsley
1 cup spinach leaves , baby
4 cups rice , steamed , hot

Instructions

1.In a small bowl, mix together the soy sauce, fish sauce, and brown sugar. Set aside.
2.Heat the peanut oil in a wok or large skillet over high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove from the wok and set aside.
3.Add the cilantro roots, garlic, and black peppercorns to the wok and stir-fry for 1-2 minutes until fragrant.
4.Add the potatoes and water to the wok and bring to a boil. Reduce heat to medium and simmer for 5-6 minutes or until the potatoes are just tender.
