1/4 cup asian fish sauce

2 garlic cloves , finely chopped
2 tablespoons soy sauce

2 lbs flank steaks
1/2 cup fresh lime juice
6 tablespoons water

8 ounces dried vermicelli , rice-stick noodles
2 medium granny smith apples
7 ounces asian mixed salad greens
1 cup fresh mint leaves , torn into pieces if large
1/2 cup dry roasted salted peanut , chopped ( sometimes labeled `` cocktail peanuts '' )

Instructions

1.In a bowl, whisk together 1/4 cup of fish sauce, ginger, garlic, soy sauce, and 2 tablespoons of sugar.
2.Brush the mixture over the steak and let it marinate for at least 30 minutes, or overnight in the refrigerator.
3.Heat grill or a grill pan over medium-high heat. Grill the steak until medium-rare, about 3 to 4 minutes per side. Transfer to a cutting board and let rest for 5 minutes.
4.In a small bowl, whisk together lime juice, water, 6 tablespoons of sugar, 6 tablespoons of fish sauce, and red pepper flakes.
5.Toss in shallots and set aside.
6.Cook noodles according to package directions. Rinse with cold water and drain well.
7.Core and slice the apples into matchstick-thin pieces.
8.In a large bowl, combine apples, salad greens, mint, and noodles.
9.Cut steak into thin slices and add to noodle mixture along with cilantro and dressing.
10.Sprinkle with peanuts and serve.
