Instructions

1.Before starting, make sure all ingredients are sliced and prepped.
2.Fill a large shallow dish with warm water.
3.Dip one sheet of rice paper into the water, making sure to submerge it completely, for about 10-15 seconds until it softens.
4.Place the rice paper onto a damp kitchen towel or a non-stick mat, and fill the lower third with a couple of banana slices and some strawberry pieces.
5.Fold in the sides and roll tightly into a cylinder shape.
6.Repeat with the remaining ingredients.
7.Serve with a dollop of strawberry flavored vegan soy yogurt and some fresh mint for garnish.
