Ingredients

10 dried long red chilies , deseeded and chopped
5 shallots , chopped
2 tablespoons chopped garlic
2 stalks lemongrass , chopped ( only the white part )
1 inch galangal , chopped
1 teaspoon coriander powder
1 teaspoon ground cumin
3 coriander roots , chopped
1 teaspoon shrimp paste
3 tablespoons roasted peanuts
Panaeng is a type of Thai curry that is rich and flavorful, yet less spicy than other Thai curries. This recipe for dry curry paste is used as the base for making Panaeng curry. The paste is made from a blend of herbs and spices such as lemongrass, galangal, coriander, cumin, and chili peppers. Instructions

1.Put the dried red chilies in a bowl and cover with hot water. Let them soak for 10 minutes.
2.Drain the chilies, remove the stems and seeds and chop finely.
3.Add the chopped shallots, garlic, lemongrass, and galangal to a mortar and pound until smooth.
4.Add the chopped roasted peanuts, coriander powder, ground cumin, coriander roots, and shrimp paste to the mortar and pound until the mixture is well combined to form a paste.
5.Store the Panaeng dry curry paste in an airtight container in the fridge for up to 1 month.
