16 uncooked large shrimp , peeled , deveined ( about 1 pound )
1 large egg
1 green onion , sliced

1/2 teaspoon salt
1 pinch ground black pepper
2 cups panko breadcrumbs , divided ( breadcrumbs )
2 tablespoons peanut oil ( or more )

Instructions

1.Preheat oven to 375°F (190°C).
2.In a food processor, blend together the uncooked shrimp, egg, green onion, lemon juice, Dijon mustard, cilantro, sriracha sauce, salt and pepper.
3.Transfer the mixture to a bowl and add 1 cup of panko breadcrumbs, mixing well until combined.
4.Using your hands, form the mixture into 16 patties.
5.Put the remaining 1 cup of panko breadcrumbs on a plate and coat each pattie thoroughly.
6.In a large non-stick skillet, heat the peanut oil over medium heat. Add the patties in batches and cook for 3 to 4 minutes per side or until golden brown.
7.Transfer the patties to a baking sheet and bake for 10 minutes or until cooked through.
8.Serve with sweet chili sauce or your favorite dipping sauce.
