Ingredients

10 rice paper ( spring roll paper )
1/2 cup minced chicken ( for vegetarian omit and increase vegetables )
1 cup soaked bean thread noodles
1 1/2 cups cabbage , sliced
1/2 cup cups carrot , sliced
1/2 cup mushroom ( black fungus , soaked in hot water 15 minutes )
1 whole garlic clove
1/2 teaspoon white pepper
1 teaspoon coriander root , sliced ( optional )
1 teaspoon thai light soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1 egg
2 tablespoons vegetable oil

These rolls are made with rice paper, which is filled with a mixture of vegetables and bean thread noodles. Instructions

1.Soak the bean thread noodles in hot water for 10 minutes, then drain and cut into small pieces.
2.Heat the vegetable oil in a pan over medium-high heat.
3.Add garlic and stir-fry until fragrant.
4.Add minced chicken, white pepper, and coriander root and stir-fry until the chicken is cooked through.
5.Add cabbage, carrot, mushroom, bean thread noodles, Thai light soy sauce, oyster sauce, and sugar. Stir-fry for a few more minutes and let the mixture cool.
6.Beat an egg and set it aside.
7.Dip a rice paper in water for 5 seconds until it becomes soft.
8.Place some filling on the soft rice paper and roll it up tightly, tucking in the sides as you go.
9.Brush the roll with beaten egg to seal it and place it on a baking sheet.
10.Repeat the process until all the ingredients are used up.
11.Preheat the oven to 200°C and bake the spring rolls for 20-25 minutes or until golden brown.
