Ingredients

Salsa :
3 ripe mangoes - peeled , pitted , and diced
1 avocado - peeled , pitted , and diced
1 orange bell pepper , diced
1 jalapeno pepper , seeded and diced
1 lime , juiced
2 tablespoons chopped fresh cilantro
1 pinch salt
1 tablespoon sweet and spicy seafood rub , or to taste
1/2 teaspoon chili powder , or to taste
salt and ground black pepper to taste
2 skin-on salmon fillets
2 tablespoons olive oil , or as needed , divided
6 corn tortillas
3 large limes , cut into wedges
Blackened salmon tacos with chunky mango avocado salsa are a fusion dish with a Mexican-American vibe. They combine the spicy and smoky flavors of blackened salmon with the tangy and sweet taste of mango avocado salsa, creating a delicious and nutritious meal that's perfect for any occasion. Instructions

1.In a large bowl, mix together all the ingredients for the mango avocado salsa, cover and refrigerate.
2.Season the skin-on salmon fillets with sweet and spicy seafood rub, chili powder, salt, and black pepper to taste.
3.Heat a large skillet over high heat and add 1 tablespoon of olive oil.
4.Once the skillet is hot, place the salmon fillets skin side down and cook for about 4-5 minutes until the skin is crispy and blackened.
5.Carefully flip the fillets over and cook for another 2-3 minutes or until cooked to your liking.
6.Remove the fillets from the skillet and let them rest for a few minutes before flaking the meat into bite-sized pieces.
7.Meanwhile, heat the tortillas in a separate skillet over medium-high heat with the remaining tablespoon of olive oil, 20-30 seconds per side, until slightly charred.
8.To assemble the tacos, spoon the mango avocado salsa onto each tortilla, add flakes of blackened salmon over the salsa, and top with fresh cilantro leaves and a squeeze of lime juice.
9.Serve immediately with lime wedges on the side.
