Ingredients

16 ounces polska kielbasa or 16 ounces smoked beef sausage ( I use Hillshire Farms )
1 -2 head romaine lettuce
2 -3 ounces fresh gingerroot ( dried wo n't do )
10 -16 ounces planters salted peanuts ( I 've tried other brands , they do n't taste as good . Dry roasted wo n't do . )
1 bunch cilantro , washed and trimmed ( optional )
1 small red onion , sliced thinly ( optional )
Peanuts, Sausage, and Ginger Wrapped in Romaine is a delicious and easy appetizer that is perfect for any occasion. Instructions

1.Rinse the romaine lettuce leaves under cold water and pat dry with a paper towel. Set aside.
2.Peel and grate the gingerroot and set aside.
3.Slice the polska kielbasa or smoked beef sausage into thin rounds and set aside.
4.In a small bowl, mix together the sliced red onions and chopped cilantro (if using) and set aside.
5.Place the planters salted peanuts in a food processor and pulse until coarsely chopped.
6.To assemble, take one romaine lettuce leaf and place a few slices of sausage on top.
7.Sprinkle some of the chopped gingerroot and peanuts over the sausage.
8.Top with a spoonful of the red onion and cilantro mixture.
9.Roll the romaine leaf into a wrap and secure with a toothpick.
10.Repeat with remaining ingredients.
