Ingredients

5 jalapeno peppers , stems removed
3 fresh tomatillos , husks removed - stemmed and halved
1/2 yellow onion
2 cloves garlic
1 1/2 teaspoons ground cumin
water , or as needed to cover
1/3 cup vegetable oil
1 1/2 cubes chicken bouillon
1 sprig fresh cilantro
vegetable oil
20 corn tortillas
1 package queso fresco ( Mexican fresh cheese ) , shredded
1/2 head lettuce , shredded
1 small red onion , chopped
5 tablespoons sour cream , or to taste ( optional )
Enchiladas Verdes de Queso, or green cheese enchiladas, are a popular Mexican dish that showcases the vibrant green color of the traditional tomatillo-based sauce. They are made with fried tortillas, shredded cheese, and a spicy green sauce made from jalapeno peppers, tomatillos, and spices. Instructions

1.Preheat oven to 350°F.
2.In a blender or food processor, combine jalapeno peppers, tomatillos, onion, garlic, cumin, and enough water to cover the vegetables. Puree until smooth.
3.Heat vegetable oil in a large skillet over medium-high heat. Add pureed mixture and cook until slightly thickened, about 5 minutes.
4.Dissolve chicken bouillon in 3 cups of hot water and add to the skillet. Add cilantro and bring to a boil. Reduce heat and simmer for 3-5 minutes.
5.In a separate skillet, heat vegetable oil over medium heat. Fry tortillas for about 10 seconds on each side or until golden brown. Drain on paper towels.
6.Spread a small amount of enchilada sauce on the bottom of a 9x13 inch baking dish. Dip each tortilla into the remaining sauce and place in the dish.
7.Spoon 1-2 tablespoons of queso fresco and a pinch of lettuce and red onion onto each tortilla. Roll up tortillas and place seam side down in the dish. Pour remaining sauce over the enchiladas.
8.Bake uncovered in the preheated oven for 15-20 minutes. Top with sour cream, if desired.
9.Serve hot and enjoy!
