Ingredients

1 tablespoon olive oil
1/2 pound lean ground beef
1/2 pound Mexican chorizo , casing removed and meat crumbled
1/2 cup chopped onion
1 tablespoon chili powder
1 1/2 teaspoons ground cumin

1/2 teaspoon ground coriander
1/2 teaspoon ground black pepper
1 can black beans , rinsed and drained
1 can diced tomatoes
1 cup frozen corn
1/2 package cream cheese
1 tablespoon butter
1 package hash brown potatoes
1 cup shredded Cheddar cheese
shredded lettuce
1 cup guacamole

Instructions

1.Preheat the oven to 375°F.
2.Heat olive oil in a large skillet over medium heat. Add the ground beef, Mexican chorizo, and onion. Cook, stirring frequently, until the meat is browned.
3.Add chili powder, ground cumin, smoked paprika, salt, coriander, and black pepper. Stir to combine, and cook for 2-3 minutes.
4.Stir in the black beans, diced tomatoes, and frozen corn. Cook for 2-3 minutes, then add cream cheese and butter. Stir until completely melted.
5.Spread half of the hash brown potatoes in the bottom of a greased 9x13 inch baking dish.
6.Pour the meat mixture over the potatoes, then add the shredded Cheddar cheese and shredded lettuce. Add another layer of hash brown potatoes, and top with guacamole.
7.Bake for 30 minutes or until the top is golden brown and the potatoes are crispy.
